In this quick 3 minute video, Sean & Cathy make Suzi A La Dijonnaise a delicious french breakfast. Make some pancakes or waffles. Then cook up a few eggs in a Teflon or non-stick pan. Add a tiny bit of cooking oil and let the eggs cook until they no longer stick to the pan. Then flip them over and cook until the eggs are over-medium done. To make a simple easy version of Dijonnaise sauce: mix some sour cream and Dijon mustard together. Add in some cubed ham and mix well. This mixture is then placed partially over the pancakes and eggs already on your plate. Then put one more pancake on top sort-of sandwiching the two pancakes around the Dijonnaise sauce. Now for the syrup: Take some delicious Griffin's Maple syrup and apricot preserves. Heat up the preserves in the microwave for a few seconds to loosen it up. Mix syrup and apricot preserves together. Pour that syrup right on top. Scrumptious!
